Pasta from the Pantry
This past week, we dedicated ourselves to get back into our routine of three home-cooked meals each week (we took a bit of a hiatus due to life). But when we're on, my system works pretty well: (1) Every four weeks, go through recipe books, pinterest boards, and our own kitchen and write down 12-15 meal ideas, depending on what sounds good and what we need to use up. I spend a lot of time on this part of the process and usually have a table full of cookbooks, Food Network reviews on the laptop, and one foot in the pantry door to see what we haven't used in awhile; (2) Circle the three for the week that look and go together the best (doing four weeks of planning at once allows for choice - almost as if you're choosing off a menu each week; (3) Get groceries during the weekend for the three meals we circled; and (4) Attempt to cook at least three times during the week, eating leftovers the other days. If we accomplish this feat, we reward ourselves by going out to eat one night a week. The weekends leave room for spontaneity, take-out Saturdays, popcorn Sundays, and travel or get-togethers with family and friends.
I've found this meal plan completely doable, as long as I'm deliberate about planning the meals ahead of time and making sure the groceries are there and ready to use by the time I'm home from work. The planning and grocery buying on-the-fly usually results in either a rushed night, or a $5 Little Caesar's Pizza. I like it because it seems there's always one night a week that we're busy - Beau has a late appointment or I have a late meeting to attend. This becomes our 'leftover' or 'easy night,' and we work around our schedules to make sure home-cooked meals are a priority.
So now that I've completely digressed and let you in on my need for lists, the real reason I'm here is to share a pasta recipe we threw together Friday night. It's the beautiful thing about pasta - as long as you have the essentials (tomatoes, basil, garlic), it's not hard to throw together a yummy pasta with all the right feel-good flavors of Italia.
The 'gredients...
-a few tbsp. of olive oil
-3-5 garlic cloves, depending on how many vampires are coming to dinner
-one cup roasted red pepper (fresh or canned), chopped
-one, 14.5 oz. can of diced, chopped, or stewed tomatoes (whatever's in the pantry)
-1/2 cup cream
-1/4 cup canned pesto sauce
-a handful of basil leaves, chopped
-salt and pepper
-1 lb. penne pasta
-1/3 cup Parmesan cheese
The break-down:
1. Heat olive oil in med. saute pan on medium heat until hot. Add garlic and stir for 2 minutes or until garlic becomes fragrant.
2. Add red pepper and cook for 1 minute. Reduce heat to simmer.
3. Add canned tomatoes. Since I only had stewed tomatoes in the pantry, I pulsed them in my food chopper until they were coarse, then stirred them in. Salt and pepper to taste.
4. Add two tablespoons of the green pesto to the sauce. Mix and let simmer.
5. Cook your pasta in a pot of salted water until al dente.
6. While your pasta is cooking, add the 1/2 cup cream and basil to the simmering sauce.
7. Now for the secret! After your pasta is cooked and drained, pour back into the pot and toss with your remaining pesto. This makes the flavor of the sauce really stick to your noodles.
8. I would recommend plating your pasta and pouring your share of sauce over your noodles. I'm not sure you would have enough sauce if you mixed the two together before plating.
9. Sprinkle with Parm.
Bon Appetite!

This Week's Photo Challenge - Multi-Colored
Linking up with the Paper Mama for her weekly photo challenge. Nothing says 'multi-colored' like a patchwork quilt, fresh berries, and baby feet :)
Finally, the weekend!
A Day in Photos - April
Yesterday was a sick day. Well, kind of. We got a call Thursday from daycare saying Cruz was running a temp. and needed to be picked up. Although we've had doctors tell us that fevers and runny diapers are not a result of teething, they seem to pop up every time a tooth is ready to pop. So, we picked him up, signed the paperwork indicating he was banned from daycare for 24 hours, and headed home for an afternoon of snuggling our little man.
Friday morning, we woke up to sub plans, sunshine, and no sign of fever. I had a day to spend with Cruz, who seemed better than ever. So, we did what any couple would do when they had an unexpected, spontaneous day at home - we went on a date. A mom and Cruz date. It was splendid.
8:00
9:00. Breakfast at Panera. An orange scone, a four-cheese souffle, and a caramel latte. We cheers'ed our drinks, ate the frosting off our scone, and built a tower of plastic cups.
10:00. Just Cruz and I in the children's section of Barnes & Noble.
Twinkle, twinkle, little star...
11:00. Discovered the railroad...
12:00. A good nap after visiting Daddy at the office and getting a ride in the office chair.
Our Barnes & Noble loot...
1:00. Dinner prep. Is the Italian flag red, green, and white to represent their signature food ingredients?
2:00. Post nap Elmo and snack.
3:00. Some outside exploration...
(On Cruz: shirt (in lots of other pics) - Zara Baby; skinny jeans - Little 77; coat - Baby Gap; shoes - Nike)
4:00.
(on me: colored jeans - Gap; sweatshirt - Gap; earrings - H&M; feather clip - AE)
5:00
6:00. Yum. Recipe coming soon.
7:00. Food coma.
8:00. Our date ends with a goodnight kiss.

Blue Jeans and a Good Hair Day
Some days, that's all it takes. Those little things every day that makes us smile, or sometimes, just make the day a little more bearable. The mornings where I begrudgingly drag myself out of bed, and tiptoe across the icy cold bathroom floor after a quick shower, only to take a sigh of relief when I remember it's Friday. I throw on my favorite pair of jeans and instantly feel ready to face the day. Or the simple fact that some days, a good hair day is all it takes to make you feel like a million bucks. It's the simple pleasures and everyday comforts of this life that are perhaps most important, yet often the most neglected.
Inspired by Gretchen Rubin's book, The Happiness Project, I know there is pleasure to be found in writing what makes one happy - even if it's just one sentence (or photo) a day. Thus, starts a Friday ritual of mine - to document the good in every day, through words and pictures.
"5 years. 365 days. 1825 happy moments captured."
Sunday: Cruz talked all day today. Mostly, his latest phrase, this high-pitched, inquisitive, ‘What’s this?’
Monday: a yummy meal and a bottle of shock top shandy
Tuesday: some quiet planning time of grading, serenaded by Gotye’s, ‘Somebody That I Used to Know’ and Mumford's, ‘White Blank Page’
Wednesday: a gorgeous night nestled in a week of rainy ones, a bedtime walk, and an easy quiet snuggle
Thursday: talking about The Fault in Our Stars with one of my students today. Made me excited, then teary. Boy, am I going to miss these kids next year...
Is it sad to say that Phillip Phillips from American Idol makes this week's Blue Jeans post? His rendition of Usher’s ‘You Got it Bad,’ was awesome.

Check this OUT!
If you are like me and find yourself humming Gotye's 'Somebody That I Used to Know' all day long, you must watch this video. Although I am the 92 millionth person to view this baby on youtube, I'm hoping there's somebody else out there as uncool as me.
Walk Off The Earth is the band covering the song in this video. Watch how cool this is...

Wordless Wednesday
I swear we read this book twenty-three times a day...
On a side note, what are your thoughts on the curtains?! Putting this new living room decor together has been anything but smooth. I snagged these babies at Target a few weeks ago and still find myself staring at them frequently throughout the day to decide whether I love 'em or not.
Nothing better than a baby in a white onesie :) Happy Wednesday!

Wok it Out
It's been awhile since I posted a new recipe on here, and with summer right around the corner, I was in the mood to mix fresh flavor and lots of bright colors. Beau and I have plans for a garden in our backyard this summer and I want to make sure I have enough recipes that require a handful of tomatoes and a few sprigs of cilantro.
Now if only avocado trees would grow in Iowa ;)
I bought Beau a wok for Christmas a few years ago after he decided he wanted to master the art of cooking fried rice. And although we're still perfecting that fried rice just three years later, we have learned how to make a really great stir fry in the process!
Here's one of my favorites. A fresh, healthy concoction that adds a whole new meaning to salad!
Here's the break down...
1 sirloin steak, sliced into strips with a sharp knife
3 garlic cloves, minced
1 tsp. chili powder
1/2 tsp. salt
1 tsp. ground coriander
1 ripe avocado, sliced lengthwise, peeled, and diced
2 tbsp. vegetable oil
8 oz. red kidney beans, drained and rinsed
8 oz. cherry tomatoes, halved
tortilla chips, lettuce, and most importantly, cilantro
1. Place the garlic, chili powder, salt, and coriander in a large bowl and mix until well blended. Mix and pour into large ziploc bag.
2. Add the strips of steak and toss well to coat all over.
3. Heat the oil in a large preheated wok. Add the beef and stir-fry for 5 minutes, tossing frequently.
4. Add the kidney beans, tomatoes, and avocado and heat through for 2 minutes.
5. Serve immediately. Top with lettuce and cilantro, and serve with tortilla chips (and summer shandy, of course!)
